
Confectioners and walnut cake
In the 16th century, confectioners from the Engadine emigrated to Italy, and later to France, Spain, England, Poland and Russia, where they opened pastry shops and patisseries. They enjoyed an outstanding reputation all across Europe. Their sweet legacy, the «Tuorta di Nusch» made of short pastry, lots of butter and a filling of chopped walnuts, may not quite conform to our modern nutritional standards, but it is worth a sin or two.
